It is often said that after the Boston Tea Party of 1773, when American colonists (^殖民者) attacked British tea ships and threw large boxes of tea into the harbor, Americans everywhere switched over to drinking coffee. "Theres a lot of truth to the story, I found," Pendergrast says. He mentions a letter John Adams wrote to his wife, Abigail, in which the Founding Father declares his love of tea but says he will have to learn to accept coffee instead, because drinking tea had become unpatriotic. For all the upsides coffee has brought the modern world, it also brought its fair share of downsides , too. Europeans carried coffee with them as they colonized various parts of the world, and this frequendy meant they made people into slaves in order to grow it.

Both admitted, however, that these were minor difficulties compared with the problems they used to face in a big office.

Coffeehouses provide the sense of community that the office used to provide, but without the stress. They may be great places to relax, concentrate, meet friends and business contacts, but they are in business, too, and they rely on customers buying their products. But where else could you get your work done, enjoy doing it, have good company, great coffee, and all for less than the cost of driving to work every. day?

Now, spurred on by recent studied suggesting that it can cut the risk of cancer and heart disease and retard the aging process, tea is enjoying a similar jolt. Enough chic tea salons are springing up to make even diehard coffee drinkers consider switching beverages.

Tea is available in more places than ever. "Tea was one of the most prolific beverage categories in 1999," with 24 percent more products offered over the previous year, reports Tom Vierhile of Marketing Intelligence Service, which tracks food and beverage trends. And the Tea Association of the United States reports that from 1990 to 1999, annual sales of the drink grew to $ 4.6 billion from $1.8 billion. "Green tea is seen by consumers as a 'functional food' delivering health benefits beyond sustenance," says Vierhile.

Recently published studies point out that not all brews are created equal. Only teas that come from the leaves of the plant Camellia sinensis — which, in their raw state are brewed to make green tea, and, with curing, can be turned into oolong and black tea leaves — have been shown to contain health benefits. Other herbal teas and infusions may taste good, yet they do little more than warm up the drinker. But for Camellia sinensis, the evidence is powerful. In a 1998 study, Harvard University researchers found that drinking one cup of black tea a day lowered the risk of heart attack by as much as 44 percent compared with non-tea drinkers, and other studies have suggested that the antioxidants in these so-called real teas can also prevent cancer.

One such antioxidant in green tea is ECGC, a compound 20 times as powerful as vitamin E and 200 times as powerful as vitamin C. "When people ask me for something good and cheep they can do to reduce their cancer risk, I tell them drink real tea." Says Mitchell Gaynor, director of medical oncology at New York City's Strang-Cornell Cancer Prevention Centre.

Among those inspired to become a green-tea drinker is Tess Ghilaga. A new York Writer who took it up after consulting a nutritionist six years ago. Researchers at UK's Newcastle University set up an experiment in their psychology department's coffee room. They set a kettle, with tea, coffee and milk on the counter and hung up a sign listing the prices for drinks. People helping themselves to a cup of drink were supposed to put a few cents in the box nearby. The scientists hung a poster above the money box, and it changed each week between images of gazing eyes and pictures of flowers. The researchers found that staff paid 2.76 times more for their drinks when the image of the eyes was hung. "Frankly we were shocked by the size of the effect," said Gilbert Roberts, one of the researchers.

Eyes are known to be a powerful perceptual (感官的) signal for humans. "Even though the eyes were not real, they still seemed to make people behave more honestly," said Melissa Bateson, a behavioral biologist and leader of the study.

Researchers believe the effect sheds light on our evolutionary past. It may arise from behavioral features that developed when early humans formed social groups to strengthen their chances of survival For social groups to work, individuals had to co-operate, rather than act selfishly. "There's an argument that if nobody is watching us, it is in our interests to behave selfishly. But when we're being watched we should behave better. So people see us as co-operative and behave the same way towards us," Bateson said.

The new finding indicates that people have a striking response to eyes. That might be because eyes and faces send a strong biological signal we have evolved to respond to. The finding could be put to practical use, too. For example, images of eyes could increase ticket sales on public transport and improve supervision systems to prevent antisocial behavior.
