Twenty years ago, it was difficult to find fresh pasta in Britain without going to an Italian restaurant. For this reason, Marco and Mariengeladi Bietro, owners of a small but busy Italian restaurant in the Scottish city of Glasgow, found themselves approached by a local Italian food store wanting to stock their pasta. Other foodstores followed this example and soon Marco and Mariangela were supplying them on a large scale as well as running a restaurant. But despite the long hours they were working, Marco and Mariangela did not consider changing career or moving from Scotland. It was only years later that they realised which business made more sense.

So in 1981, Marco and Mariangela sold their restaurant, bought a former factory and moved to the English countryside. They both miss city life. Although suitable property in the country was cheaper than in the city, it was only the thought of trucks wasting hours driving from Scotland to customers in the south of England that persuaded the couple to make the move.

At first, they sold only to small specialist food stores and were unwilling to supply any large supermarket chains. But developments in packaging, allowing pasta to stay fresh longer, persuaded them they were wrong and this market now buys the major part of Casa Italiana's output. However, their decision not to supply restaurants has remained unchanged: they feel they should sell food cooked on the premises as they did themselves.

In the early stages of the business, clients were keen to have traditional pasta made in the Italian way. Now customers are demanding pasta influenced by the traditions of other countries. It is with some regret that Mariangela has developed a range of exciting new recipes. She feels that she cooked her best pasta in the early days.

What are Marco's and Mariangela's roles nowadays? Although Marco has tried to encourage Mariangela to leave food production to employees and spend more time dealing with clients, she remains in charge of the kitchen. Marco is happy to be responsible for the financial and administrative side of affairs.

Marco dreams of launching restaurants sharing the Casa Italiana name across the UK. Yet he knows it would be more profitable to set up a second production centre. While the couple consider their long-term options, Mariangela is realising her dream: places on the first Casa Italiana cookery course are about to be advertised. But who knows? The Casa Italiana brand is already so strong that little can prevent Marco from also satisfying his ambitions for the firm.

oblem. One of there, for example, was the great Italian artist, Leonardo Da Vinci. In the sixteenth century he made designs for machines that would fly, But they were never built.

It is estimated that up to 1,000 foreigners attend the big derby matches in Italy with as
many as half of those coming from England. So what is it about Italian football that makes people travel across a continent to see a game? "It is a combination of the big-name players playing in the top cities. It is something completely different for the average fan," says Paul Saxton of Fan Fare Events who runs tours from England to Italian matches.

But the majority of those who are attracted to Italian football are happy to follow their favorites via television. Former Northern Ireland manager Bryan Hamilton, now working as a commentator for British Eurosport's coverage of Serie A, believes fans enjoy the coolness of the Italian game. "It is about panache, a bit of style. Italian people dress with style. and have a stylish manner and their football embodies that," he says. "There is real passion, just look at Perugia coach (Serse) Cosmi," he says referring to the almost manic coach, famed for his baseball cap and his animated behavior. during games. "Then there is Roberto Mancini, the Lazio coach, he is such a smooth operator, his shirt collar is always pressed right, he always looks so composed yet he is very organized and committed. They do it with style," added Hamilton.

Italian football did not always enjoy such an image—back in the 1960s, the era of defensive 'catenaccio' football, Italian clubs were viewed as cynical and negative and matches were dominated by defense and ruined as a spectacle by tactical fouls. It was not until Arrigo Sacchi's AC Milan team in the late 1980s, enriched by some of the best attacking players in the world such as Dutchmen Ruud Gullit and Marco van Bas-ten, that Italian teams were able to win while providing entertainment that was enjoyed globally.

Spanish football, with current European champions Real Madrid in the vanguard, was offering the flair and glamour the Italians once treasured. This season however only Real have made it into the last four, prompting talk of an Italian renaissance.

While the results would suggest a revival is under way, Sacchi has demanded that more attention be paid to entertaining the fans. "The aesthetic element, the satisfaction that one can gain from an entertaining sporting event, the emotions, can't just be related only to the result but the achievement of something else," he said. His choice of words, almost poetic in comparison to the cliched mumblings of many English and northern European coaches, reveals the extent to which Italians agonize about the meaning of the game. Yet another reason why so much of the world is in love with Italian football.
